D&#8217;aussi loin qu&#8217;il se souvienne, les vignes de Hondarrabi Zuri encadrent l&#8217;entr\u00e9e de sa ferme. Depuis des g\u00e9n\u00e9rations, c&#8217;est une coutume familiale de pr\u00e9parer le txakoli pour le d\u00e9guster avec les amis et la famille.<\/p>\n<p>Il a rencontr\u00e9 <strong>Maria Pilar<\/strong> Etxezarreta, la m\u00e8re de famille, \u00e0 Orio, un village de p\u00eacheurs pr\u00e8s de Saint-S\u00e9bastien. <strong>Ensemble, ils ont travaill\u00e9 pendant 39 ans dans l&#8217;entreprise familiale de poissons et de viandes grill\u00e9s appel\u00e9e Asador Katxi\u00f1a.<\/strong> Ils se sont toujours engag\u00e9s \u00e0 offrir des produits frais et de qualit\u00e9. C&#8217;est pour cette raison qu&#8217;ils ont pris de l&#8217;importance dans la gastronomie basque.<\/p>\n<p>Jos\u00e9 Miguel Zendoia a continu\u00e9 \u00e0 fabriquer le txakoli. Suivant les instructions de ses pr\u00e9d\u00e9cesseurs, il l&#8217;\u00e9laborait et le donnait \u00e0 go\u00fbter \u00e0 ses amis et clients. Avant d&#8217;entrer dans la salle \u00e0 manger, ils passaient devant le gril pour le saluer et c&#8217;est alors qu&#8217;il sortait sa propre r\u00e9colte et recueillait l&#8217;avis de ses amis. Il aimait beaucoup le txakoli, mais il avait un probl\u00e8me : il ne pouvait pas l&#8217;apporter sur la table sans \u00e9tiquette. Il ressentait un \u00e9norme d\u00e9sir de l&#8217;\u00e9laborer et ses enfants, <strong>I\u00f1aki et Izaskun Zendoia<\/strong>, ont d\u00e9cid\u00e9 de r\u00e9aliser son r\u00eave.<\/p>\n<p>Pour ce faire, ils ont plant\u00e9 8 hectares de vignes et <strong>construit la cave Katxi\u00f1a, non seulement pour produire du txakoli, mais aussi pour proposer aux visiteurs une offre gastronomique li\u00e9e au txakoli et \u00e0 la gastronomie de la c\u00f4te basque<\/strong>. D\u00e9sormais, leurs enfants I\u00f1aki et Izaskun Zendoia dirigent avec beaucoup d&#8217;enthousiasme la cave, <strong>qui propose d\u00e9sormais des txakoli, un service de restauration, des banquets et des \u00e9v\u00e9nements professionnels.<\/strong><\/p>\n<p>En 2018, le restaurant Bodega Katxi\u00f1a a re\u00e7u le prix du <strong>&#8220;Meilleur Steakhouse de luxe au monde 2018&#8221;.<\/strong> Une nouvelle qui les a pris par surprise et qui les a beaucoup encourag\u00e9s \u00e0 suivre la voie qu&#8217;ils avaient mise en \u0153uvre. C&#8217;\u00e9tait \u00e9galement une bonne nouvelle pour leurs parents, car ils \u00e9taient \u00e0 deux doigts de prendre la grande d\u00e9cision de partir \u00e0 la retraite.<\/p>\n<p>En 2020, le restaurant Bodega Katxi\u00f1a a re\u00e7u son <strong>premier Sol Repsol.<\/strong> Encourag\u00e9s \u00e0 continuer de progresser et anim\u00e9s d&#8217;un esprit insatiable, ils ont re\u00e7u le <strong>deuxi\u00e8me Sol Repsol<\/strong> en 2022.[\/vc_column_text][\/vc_column][\/vc_row][vc_row row_height_percent=&#8221;0&#8243;
